Chef and restaurateur Costas Spiliadis opened the second Florida location of Greek restaurant estiatorio Milos at the One Flagler office tower in West Palm Beach on Feb. 7.
Founded in Montreal in 1979, estiatorio Milos has expanded to 13 sites around the world with the West Palm Beach opening and has garnered international acclaim for its dedication to quality and simplicity. The restaurant is renowned for sourcing the freshest seafood, flown in daily from the Mediterranean, and for its emphasis on seasonal produce and select meats. Embracing the Greek tradition of philoxenia, or warm hospitality, Milos encourages communal dining, allowing guests to share dishes and experience Greek culture.

A highlight of the Milos experience is the fish market display, where diners’ options include whole fish, shellfish and live crustaceans. With guidance from the staff, you can choose your preferred catch, which is then prepared to your liking, be it sashimi-style, grilled or baked in sea salt.

Signature dishes include tuna tartare drizzled with Milos’ exclusive extra-virgin olive oil; the Milos Special, a combination of thinly sliced zucchini and eggplant lightly fried and served with saganaki cheese and tzatziki; and a traditional tomato salad with vine-ripened tomatoes, cucumbers, green peppers, olives, Vidalia onions, barrel-aged feta cheese and olive oil.
Among the desserts are authentic Greek yogurt with walnuts and thyme-infused honey from Kythira and baklava Kaimaki, a blend of artisanal ice cream layered with sweet honeyed baklava and ekmek kataifi.
The extensive selection of Greek wines showcases indigenous grape varieties, including Assyrtiko, Xinomavro and Agiorgitiko. These wines, sourced from regions such as Santorini and the Peloponnese, offer an authentic taste of Greece’s diverse terroirs.
Designed by Tara Bernerd & Partners, the two-story, 294-seat restaurant seamlessly blends indoor and outdoor spaces. The interior features natural materials such as Pentelikon marble, oak planks and textured stone, creating an ambience inspired by Greece’s natural beauty. Art by Evridiki Spiliadis and custom banquettes add to the aesthetic, while olive trees and soft lighting enhance the serene atmosphere.

Estiatorio Milos serves as the culinary anchor of One Flagler. The 25-story tower offers more than 270,000 square feet of premium office space, panoramic waterfront views, a fitness center designed by Equinox, an executive conference room and private outdoor terraces.
